Just for kicks, I decided to swap the stock handlebars for a set off of an old mountain bike. I really liked the way it turned out. Allows me to straighten my arms abut a bit, and lean forward easier for launches. I think it looks pretty cool, too! I do have to hang a knee out for tight turns, but it doesn't seem to be a problem. I did think about moving or adding pegs to get my knees out of the way, but I'm just going to ride it for a while and see how it goes. Sorry for the low light in the pic.
