what happens if you ran different size sprockets like a 2 speed set up without the centr clutch on the jackshaft?

Seems engine reaches certain rpm, the one sprocket would override the other?

do you mean both sprockets are fixed ? if so you would have a jam the gearing would be fighting its self like a car in to gears at once

It would not work. As said above it would jam and if you forced it one of the chains will snap.
