1966 Taco Burrito gearing help

This is my first Mini Bike restoration. I'm restoring this for the owner of the company I work for as a Christmas gift as a way of saying thanks, and to take him back to his child hood of riding his Mini Bike. I need some help on selecting the proper input and output jackshaft sprockets.

Details:
3 HP 1966 Briggs 3600 RPM
12 tooth clutch sprocket
? Jackshaft input
? Jackshaft output
60 tooth rear sprocket
11.5 tall tires

I need to run a minimum of a 16 tooth on the Jackshaft output, otherwise the chain rubs on the scrub brake shaft. I'm assuming I should have this bike go about 25-28 mph hour. Thanks!

Are you restoring it to make it original? Because burritos didn't come with jackshafts..
I'm doing a fairly accurate restoration, sometime in its early glory added a Jackshaft kit. I decided to leave since it had been upgraded do long ago. How do I post pictures?
